The traditional Christmas Day turkey can be the subject of a ‘love-hate’ relationship.
Firstly, it takes a fair old bit of cooking. I used to get up 5am to have one ready for the table at 1pm using the Delia schedule, having got the ginormous old bird out of the oven before midday to make room for anything else to cook. Then, there is so much meat you can be eating through the pile of leftovers for days if not weeks, working your way through cold turkey, turkey and ham pie, turkey curry and more cold turkey.
There is, though, a better way.
